How To Make Vegan Persimmon Pudding

Ingredients
For this recipe, you are going to need a few things in order to create the perfect spongy texture.
- ¾ a cup of mashed persimmons (Around two persimmons).
- 1 cup of brown sugar.
- 2 tablespoons of canola oil
- 2 teaspoons of vanilla.
- ½ a cup of almond milk (this helps to make the pudding extra fluffy and delightful, and helps to make it melt away in your mouth.
- 1 and a ½ cups of flour.
- ⅓ of a cup of almond flour.
- ½ a teaspoon of salt.
- 1 tablespoon of baking soda.
- ¾ of a teaspoon of allspice.
- ½ a teaspoon of ceylon cinnamon.
This is quite an extensive ingredient list, but they all play a vital role in helping to make the recipe work in terms of flavor and texture.

Step 1 – Get Your Persimmons Ready
Of course, this is one of the most vital steps. First of all, you want to make sure that your persimmons are fully ripe, as this will help them to taste best. When they are ripe, persimmons become slightly soft, and the skins should easily peel away.
Once your persimmons are ripe, and you have fully peeled them, place them into a bowl, and mash them down. This helps to release the flavors, and primes them for being added to the pudding!
