How To Make Vegan Persimmon Pudding
Luckily, with the right ingredients and the right instructions, you can easily make a Persimmon pudding that will delight everyone, including those on a vegan diet!
Let’s start by looking at the ingredients that you will need to make this recipe work!
For this recipe, you are going to need a few things in order to create the perfect spongy texture.
- ¾ a cup of mashed persimmons (Around two persimmons).
- 1 cup of brown sugar.
- 2 tablespoons of canola oil
- 2 teaspoons of vanilla.
- ½ a cup of almond milk (this helps to make the pudding extra fluffy and delightful, and helps to make it melt away in your mouth.
- 1 and a ½ cups of flour.
- ⅓ of a cup of almond flour.
- ½ a teaspoon of salt.
- 1 tablespoon of baking soda.
- ¾ of a teaspoon of allspice.
- ½ a teaspoon of ceylon cinnamon.
This is quite an extensive ingredient list, but they all play a vital role in helping to make the recipe work in terms of flavor and texture.
Now that you have the right ingredients, let’s find out how to make it!
Step 1 – Get Your Persimmons Ready
Of course, this is one of the most vital steps. First of all, you want to make sure that your persimmons are fully ripe, as this will help them to taste best. When they are ripe, persimmons become slightly soft, and the skins should easily peel away.
Once your persimmons are ripe, and you have fully peeled them, place them into a bowl, and mash them down. This helps to release the flavors, and primes them for being added to the pudding!
Step 2 – Get Started With Your Wet Ingredients
The ingredients that we listed above can be categorized in two distinct ways: “wet” and “dry” ingredients. Now is the time to get going with the wet ingredients.
Grab the mashed persimmon, add it to a bowl, alongside the almond milk, and mix them together. Alongside those, you should then add the brown sugar, canola oil, and vanilla extract. Stir them all together until they are nicely mixed!
Step 3 – Mix In The Dry Ingredients
We’re getting closer to persimmon pudding heaven! At this step in the process, you will want to take all of the remaining “dry” ingredients, and then mix them into the mixture that you have already created from the wet ingredients!
This includes the flour, almond flour, baking soda, cinnamon, and salt. Once you have added them to the mix, simply stir them all together until everything comes together nicely.
If you wish to add any extra ingredients, such as chocolate chips, fruit pieces, or anything else, then make sure to mix them in too!
Step 4 – Get Baking
Now comes the easier part of the process. Depending on whether you want to create small individual puddings, or you want to create one big pudding that can easily be served out, you will want to grab an oven-safe dish or another container that you can allow the puddings to bake in.
Once you have your baking implement, lightly oil the base of the implement, and then simply pour in the finished mixture. Try not to fill the baking dish too much, and try to leave the dish around only ¾ full!
Once you have poured the batter out, all you then need to do is heat the oven to around 350 degrees, before placing the batter into the oven. Once you have placed the batter into the oven at the right temperature, allow the pudding to cook for around 30 to 35 minutes.
You will be able to tell if the pudding is baking properly by checking to see if the top of the pudding is firming up!
If you are still unsure if the pudding is fully baked, we recommend taking a small toothpick and poking it into the pudding before pulling it out to check if any batter comes out with the pick.
If the toothpick lifts out any batter, then the pudding is not yet fully baked and will need a few extra minutes.
Step 5 – Let It Cool
This is another crucial step that many people often overlook! Once you have made sure that your pudding has baked fully, allow it to cool on the kitchen counter for around an hour.
This will help the pudding to achieve that perfect cakey texture that you love! Once it’s cooled, it’s ready for you to serve and enjoy!
As you can see, making a vegan persimmon pudding is actually a lot easier than you may initially think! It takes very little effort, and can be done incredibly easily, provided you have the right ingredients to achieve the correct taste and texture!
